Macaroni Supreme and photo by sucre © Sarah Phillips

This is a recipe that my Grandmom used to make for my mom when she was young and we found it the other day. Thought I would share it with all of you because it is really yummy! It was originally a recipe that came with my Grandmom's microwave, but I make it all on the stovetop! Hope you like it as much as my family!! Even my 2 year likes it.

INGREDIENTS
1 lb. lean ground beef
1 large onion, finely chopped
1 can (35 oz.) Italian-style tomatoes, undrained (I use the basil, garlic, oregano diced tomatoes)
1 package (10 oz.) frozen green peas
1 cup sliced fresh mushrooms (I have also used canned, drained)
3/4 cup dry red wine
1/4 cup chopped parsley
1 teaspoon sugar
1 1/2 teaspoon salt
pepper to taste
3 cups cooked and drained macaroni noodles
2 cups freshly grated Parmesan cheese

INSTRUCTIONS
Combine meat and onions and cook on stove in large pan until meat is no longer pink. Drain off any liquid that remains. Add tomatoes, peas, mushrooms, wine, parsley, sugar, salt, and pepper to pan. Cover, and simmer on low heat for 20 minutes. In a 13×9 baking dish layer casserole. Start with half the sauce, half the cooked macaroni and 1 cup cheese. Repeat and top w/ remaining cheese. Bake in 350 degree oven for 15-30 minutes. Let stand 5 minutes before serving.
