I created this recipe to be “as easy as pie”. It has lots of flavor and is slightly flaky which is hard to accomplish with an oil-based pastry crust! However, I figured out how to accomplish this through ingredients and technique.
PASTRY RECIPE HELP / LOW / REDUCED-FAT RECIPE HELP

INGREDIENTS
1 1/2 cups unbleached all-purpose flour; spoon into measuring cup and level to rim
1 1/2 teaspoons sugar
1/2 teaspoon salt
2 tablespoons cold 1 or 2% milk 
1/2 cup canola oil or any vegetable oil

INSTRUCTIONS
1. Stir together flour, sugar and salt. In a small bowl, beat milk into canola oil with fork until frothy.

2. Form a well in the flour mixture. Add canola oil mixture and combine gently with a fork until crumbly.

3. Pat in pie pan as you would for graham cracker crust. Add filling and bake according to pie recipe.

Per slice (8 slices) without filling and 1% milk: calories, 105; fat 7g (saturated 0.5g, m 4.0g, p 2.1g), cholesterol 0.1mg; protein 1.3g; carbohydrate 9.4g; fiber 0.4g; iron 0.5 g; sodium 73.4 mg; calcium 4.2 mg
