They are light, luscious and easy! When my friend Mani Niall owned Mani's Bakery in Los Angeles, a movie company came to him to develop a healthful doughnut to use as a prop in a Danny DeVito movie (Danny is a very health conscious eater and didn't want to eat junk, even in the name of art). Mani's solution, a baked doughnut, took LA by storm. These are a little bit different from his, as Mani cooks with fruit juices instead of sugar, but mine are just as good. You'll need mini-fluted tube pans for these.

INGREDIENTS
Doughnuts
1 cup plus 2 tablespoons whole wheat pastry flour; spoon into measuring cup and level top to get 1 cup, then measure 2 level tablespoons
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt

1/2 cup sugar
1/3 cup plus 1 tablespoon unsweetened applesauce; measure in a dry measuring cup and level to rim
1/3 cup plus 1 tablespoon low-fat buttermilk
1 large egg
1 1/2 teaspoons canola oil
1 teaspoon vanilla extract

Glaze
1 cup powdered sugar
2 tablespoons apple juice or water
1 teaspoon vanilla extract

INSTRUCTIONS
1. Position a rack in the center of the oven and preheat to 350 degrees F. Generously spray six 4-inch nonstick mini-fluted tube (Bundtlette) pans (Nordic Ware) with oil.

2. To make the doughnuts, in a medium bowl, whisk the flour, baking soda, cinnamon, and salt until well combined. Set aside.

3. In another medium bowl, using a handheld electric mixer set at high speed, beat the granulated sugar, applesauce, buttermilk, egg, oil and vanilla until frothy about 1 1/2 minutes. Make a well in the center of the dry ingredients, and pour in the applesauce mixture. Using a spoon, stir until just combined. Do not overmix.

4. Divide the batter equally among the prepared molds. Bake until the tops spring back when pressed gently around the edges, 15 to 20 minutes. Do not overbake. Cool the molds on a wire cake rack for 5 minutes. Then, run a knife around the inside of the molds to release the doughnuts. Invert onto the rack and cool completely.

5. To make the glaze, whisk the powdered sugar, apple juice, and vanilla until smooth. Drizzle over the tops of the doughnuts. (I leave my cooled doughnuts on the wire cake rack, set the rack on a piece of waxed paper and then drizzle the glaze. The extra glaze drips onto the waxed paper). Let stand until the glaze is set, about 30 minutes.

Nutritional Analysis: each-about 250 calories, 5 grams protein, 54 grams carbohydrates, 3 grams fat (less than 1 gram saturated fat), 36 milligrams cholesterol, 175 milligrams sodium, 3 grams fiber.

VARIATIONS
Healthy Oven Baked Banana Cocoa Nibs Whole Wheat Glazed Doughnuts:
Substitute the applesauce with an equal amount of mashed banana premixed with 1/2 teaspoon lemon juice; Add an extra 1/2 teaspoon canola oil. If you have cocoa nibs, add in 1 tablespoon to the flour ingredients!
Substitute the apple juice with half freshly brewed strong COLD coffee in the glaze. Add in 1/2 teaspoon vanilla extract. (Coffee and bananas are so good together!) NOTE: Before you cool the coffee, if it isn't strong, it won't taste good. Dissolve 1/8 teaspoon or so of instant coffee granules or instant espresso powder in it while it is still hot to strengthen it. Don't add too much because the coffee will become bitter. Let it cool before using.

Healthy Oven Baked Lemon Poppyseed Whole Wheat Glazed Doughnuts: Add 1/2 teaspoon lemon extract or 1/2 teaspoon lemon peel with the vanilla extract. Add in 1 tablespoon poppyseeds to the flour ingredients. Omit the cinnamon.
Substitute the apple juice with lemon juice in the glaze.

Healthy Oven Pumpkin Spice Whole Wheat Glazed Doughuts: Substitute the applesauce with an equal amount of solid pack pumpkin puree (Libby's), not pumpkin pie filling; Add an extra 1/2 teaspoon canola oil; Add 1 teaspoon orange peel and 1/2 teaspoon freshly grated nutmeg and a pinch of cloves to the batter with the pumpkin puree.

Substitute the apple juice with orange juice in the glaze. Add 1 teaspoon orange peel to the glaze.
