The act of Supreme means to remove the skin, pith, membranes, and seeds of a citrus fruit and separate its wedges. You can do this with any citrus fruit, such as grapefruit, orange, etc.
We use this technique with the Toasted Pound Cake with Grapefruit and Vanilla Curd Recipe and the Chocolate Zucchini Gluten-Free Tea Cake Recipe.
HOW TO TIPS: We show how to supreme a grapefruit!
1. Remove peel with a sharp paring knife, completely removing the bitter pith.
NOTE: The idea is to remove all the skin and the pith at the same time but making sure that its not cut too deep thereby removing the fruit too. You don't want to lose too much of the fruit just the skin and pith.
2. Once all the skin and pith have been removed, hold the fruit above a plate or bowl.
This is to catch the fruit juice that would flow from your fingers while you are segmenting.
3. Cut segments by cutting on either side of each membrane, releasing each individual grapefruit segment.
4. You will have the membranes left over once the segments are all out.
Squeeze out these membranes over the plate or bowl to release all the juices. Once squeezed dry, throw these pieces away.
5. The grapefruit segments are called Supremes. Use the juice in the recipe, if called for, or drink it as a treat!
STORAGE
Store the grapefruit Supremes or segments in their natural juices in the refrigerator until needed. They will keep for a few days.
Citrus fruit does not freeze well.
