We use this recipe to create flower toppers for the Spring Blossom Petits Fours or Petit Four Squares. But you can use them to decorate any baking recipe.
FROSTING ICING ETC. HELP

INGREDIENTS
1 1/2 cups rolled fondant; I used Marshmallow Fondant. You can also use homemade rolled fondant or store bought.
Cornstarch

54 Silver dragees or sugar pearls

Gel food color: Color the fondant to complement the colors of the cake. I tinted the Spring Blossom Petits Fours or Petit Four Squares yellow pink and violet so I decided to make 18 flowers in each color. You will also need to color a small amount of fondant green for the leaves.

Equipment: I used the “5 petal Blossom Mold” to make the flowers.
This is a WONDERFULLY easy tool to make beautiful and professional looking flowers for your cupcakes and little cakes. It is WELL WORTH the $15. price tag.

INSTRUCTIONS
STEP I: MAKE THE FONDANT FLOWERS
1. Roll the fondant out to about 1/16-inch on a cornstarch dusted work surface.
Use a 5 petal flower cutter and cut out as many flowers as you can.

2. Brush a little cornstarch on both sides of the mold then place one cut-out flower in the center of the concave side of the flower mold.

3. Place the other side of the mold on the fondant and press down to form the flower.

4. Remove the top of the mold then gently squeeze the mold to release the flower. Set the flower aside to dry.

TIP: To make a two-toned flower cut out the flower place it in the mold then add a small flattened ball of a contrasting color in the center of the flower.
Press mold together then push out the flower.
Please excuse my food coloring stained fingernails.

STEP II: MAKE THE FONDANT LEAVES
1. Use a small leaf cutter and cut out leaves.
Press the leaves on a leaf veining mat then recut the leaves with the cutter to refine the shape.
If you do not have a leaf veining mat you can use the dull side of a small paring knife to impress a vein pattern in the leaves.

2. Place leaves to dry over a chopstick or brush handle to give them a little shape.

STEP III: ASSEMBLE THE FONDANT FLOWER TOPPERS. LET DRY BEFORE USING.
1. Brush a small amount of water in the center of each flower and gently press a dragee or candy pearl to adhere.

2. Brush a little water on the base of each leaf then gently press a blossom onto the leaf.
You should position the leaf so it is in between two of the flower petals so it shows.

3. Continue with all the flowers and leaves and set them aside to air dry.

STORAGE
After drying store assembled flowers and leaves in an airtight container.
