COOKIE RECIPE HELP

INGREDIENTS
1 recipe “Rice Krispies Treats, Tweaked” (RKT); Make in a 9-inch x 13-inch pan, and allow them to cool.
1 2-inch round cookie cutter
1 bag Wilton green candy melts
1 cup Wilton white candy melts
2 Plastic Squeeze bottles
12 – 14 2-inch swirled lollipops, we used red and green
12 – 14 red polka dot cardboard baking cups (or whatever color you like); 2.4-inch bottom diameter, 2 1/4-inch height and 2 3/4-inch top diameter
1 cup sweetened shredded coconut
Few drops green gel paste food color
3 5-ounce packages Mike & Ike Chewy Fruit Flavored candies; for the flower petals. Amount will vary, depending on the colors you want to use.
Yellow Sixlet candies– for the flower centers; Instead, you can buy Assorted Sixlets and just use the yellow ones for this project.

INSTRUCTIONS
STEP I: MAKE THE RICE KRISPIES TREATS BASES. PLACE THEM IN THE RED POLKA DOT CARDBOARD BAKING CUPS.

1. When the Rice Krispies Treats (RKT) have cooled, tip pan over on a parchment lined baking surface.
Spray the 2-inch round cookie cutter with non-stick spray, and cut out rounds.

3. Melt about 1 cup of GREEN candy melts, according to the directions on the package.

4. Put about a teaspoon on one RKT round, and place another RKT round directly on top, pressing down slightly, to adhere.

5. Put layered RKT in a Red Polka Dot Cardboard Baking Cup.
Repeat the directions above until all the rounds are used.
Set the unused candy melts aside.

4. Set the filled baking cups aside so the candy melts can set.

STEP II: DECORATE THE LOLLIPOPS.
1. Meanwhile, melt about 1/4 cup of WHITE candy melts and put it in a squeeze bottle.

2. Squeeze a small amount of melts in the center of a lollipop and place a Sixlet Candy on top. This will be the center of a flower.

3. Repeat above steps on all the lollipops.
Set lollipops aside for about 15 minutes so the melts can set.

4. Choose the Mike & Ike Candy colors you want to use on your pops for the flower petals. Each pop takes 8 Mike and Ike candies.
It is best to decide the colors and lay them out before you proceed.

If necessary, pop the squeeze bottle into the microwave for about 10 seconds to remelt the candy melts.
Pipe a small line of candy melts on the lollipop and set the “petals” in place, one by one.

NOTE: Be careful not to use too much candy melts, or it will ooze out from under the candy, and it will look messy.
If you get any candy melts on the top of the Mike & Ikes you can just wipe it off.

5. Repeat the above steps with the rest of the lollipops and then set them aside for about 20 minutes to set the candy melts.

STEP III: FINISH THE PROJECT
Insert the lollipop sticks into the RKT filled baking cups:
1. When the Mike & Ike candies are securely attached to the lollipops, you can then insert them into the cups.

2. Remelt the green candy melts that you used in Step I, and dip the bottom of the lollipop stick into the melts, and press it into the center of the Rice Krispies Treats filled baking cups.
Hold it briefly, so it stands up straight.

3. Repeat above steps with all the lollipops, then set them aside to set up, checking them, occasionally, to make sure they stay nice and straight.

Tint the coconut green for the “grass”:
1.  While the pops set up, take the 1 cup of shredded coconut and place it in a bowl.

2. Add two drops of green gel past food coloring and stir until it is evenly distributed.
NOTE: I like to use my hand to mix the color in.

Finish the project:
1. Melt about 1/4 cup GREEN candy melts and put it in a squeeze bottle.

2. Squeeze the melts over the surface of the RKT in the baking cups, making sure to put some where the RKT meets the wall of the cup. This will make the treats more sturdy.

3. Sprinkle the coconut over the surface of the candy melts while it is still molten, so it sticks.

4. Press the coconut down gently, to make sure it sticks, then brush the excess away with your fingers.

5. Repeat the above steps with the rest of the treats.

STORAGE
Can be made up to two days ahead. Store at room temperature, in a lidded container.

Lollipops can be decorated several days ahead, and then the treats can be assembled the day of your party. This would be a great time saver, since the lollipop decoration is the most time consuming aspect of this project.
