The other day I forgot I had to take cookies to an open house and by the time I remembered, it was too late to run to the store. I'd seen this recipe before and decided to try it. It's certainly fast and inexpensive and the cookies were very good. I noticed at the open house that people went back for seconds, so evidently they were a hit. The nice part is that there's only a bowl, spoon and measuring cup…and no flour all over (I'm NOT neat! LOL)

I used a chocolate cake mix I'd gotten on sale for 79c and 1/2 package of Andes mint chips and got 5 dozen cookies. Total cost was less than $2.00. At the price of flour and eggs around here, it's definitely worth using this recipe unless you're making “gourmet” cookies.

I'm going to try a lemon mix w/crushed lemon candy and see how that turns out. I might frost those 'cause I love lemon frosting. Linda
